Vegan and Gluten Free Lemon Bars

A healthy version of an old favorite, these vegan and gluten free lemon bars are packed with tangy lemon flavor. A very easy recipe that makes a fantastic summer dessert!

Ingredients – (vegan and gluten free lemon bars)

Crust

  • Crust: 1/2 cup organic sugar
  • 1/4 cup light olive oil (or vegetable, canola, or other neutral oil)
  • 2 Tbsp. almond milk
  • 1 3/4 cup gluten-free oat flour
  • 1/2 tsp. salt

Lemon Layer

  • 1 cup organic powdered sugar (plus a little more for dusting)
  • 3/4 cup lemon juice
  • 3 Tbsp. almond milk
  • 3 Tbsp. white or brown rice flour
  • 2 1/2 Tbsp. tapioca starch
  • 1 tsp. lemon extract A couple drops of yellow food coloring (optional)

Cooking Instructions -(vegan and gluten free lemon bars)

  • 1. Preheat the oven to 350 degrees Fahrenheit.
  • 2. To a bowl, add sugar, oil, and almond milk. Stir well.
  • 3. Add oat flour, and salt. Stir until a dough forms.
  • 4. Transfer dough to a greased 9×9-inch square baking pan, spread out, and press down with your hands until smooth.
  • 5. Bake for 20 minutes.
  • 6. While the crust is baking, to a pot, add powdered sugar, lemon juice, almond milk, rice flour, and tapioca starch. Whisk well.
  • 7. Heat over medium heat until thickened, whisking almost constantly.
  • 8. Remove from heat, and add lemon extract, and yellow food coloring. Whisk well.
  • 9. Pour over the hot baked crust, and spread smooth.
  • 10. Return to the oven to bake for another 15 minutes.
  • 11. Let cool, and then chill in the refrigerator for a couple of hours, before dusting with powdered sugar and slicing. Makes 16 squares.
