I like quick and easy but I also like delicious and healthy. Luckily for me, this bell peppers and eggs recipe fulfills all these requirements.

Ingredients – Bell Peppers and Eggs
If you have some leftovers in the fridge, spinach, onion or even naughty bacon, for example, you can easily add them. This recipe is very flexible with ingredients, except of course for the bell peppers and eggs themselves 🙂
- 2 Eggs
- 1 Big bell pepper cut into rings
- Salt to taste
- Pepper to season
- 1 Tbsp olive oil/butter
- 1/4 Tsp red chilly flakes
- Fresh coriander to garnish
